Chia Seed Pudding
If you like bubble tea or tapioca pudding you will love soaked chia seeds. I especially like this in the morning as a substitute for cold cereal or yogurt. You can top it with pretty much anything - berries, cacao nibs, coconut shavings. The possibilities are endless. I got this recipe from my friend Gena at choosingraw.com. Check her out here!
- 2 cups unsweetened vanilla hemp milk
- 2 tablespoons brown sugar syrup or maple syrup
- 3/4 cup organic chia seeds
- Handful of berries of choice or chocolate covered almonds
Start with a medium size bowl. Mix 3/4 cup of dry chia seeds with 2 cups of hemp milk, almond milk or coconut milk. Stir in sweetener of choice, I used brown sugar water in this recipe and it worked out well. Stir every minute for 5 minutes then let the mixture sit in the fridge. Within a few minutes you'll start to see the seeds plump up like magic! Feel free to enjoy after an hour or you can stir in a little extra liquid the next morning, fluff with a fork and voila! Top with any delicious fruit and nut combo. I'm looking forward to trying blood orange and pistachio. Basically, don't hesitate to get all Pinkberry on your chia pudding!
(Tip: don't let the seeds go down the drain! They can clog the pipes)
